On the basic non sat nav setup you can't really change anything. On the later stuff like pathfinder and navara you can change a few settings and have a little fiddle.
Even on the settings I can get into I can't really do that much with them. Most of the hidden stuff is for diagnostic usage.
Things like rear wiper, that is on micra and is programmed into the body control module. Radio settings are held on the SECU and audio units and is detected via the NATS code on the key. Anti hijack on the door locks can be changed if your model supports it, I think it is, press both buttons for 5 seconds then the indicators should flash. This should be in your users manual anyway.
